Rufus Plough: ZIPLOC OMELET (This works great! Good for when all your family is together. The best part is that no one has to wait for their special omelet).Have each person write their name on a Quart-size Ziploc freezer bag with permanent marker.Crack 2 eggs (large or extra-large) into the bag (not more than 2) shake to combine them.Put out a variety of ingredients such as: cheeses, ham, onion, green pepper, tomato, salsa, etc.Each person adds prepared ingredients of choice to their bag and shake. Make sure to get the air out of the bag and zip it up.Place the bags into rolling, boiling water for exactly 13 minutes. You can usually cook 6-8 omelets in a large pot. For more, make another pot of boiling water.Open the bags and the omelet will roll out easily. Be prepared for everyone to be amazed.Nice to serve with fresh fruit and coffee cake; everyone gets involved in the process and a great conversation piece. Pasty Cobbett: Inca Quinoa SaladMakes 4 side or 2 main servings.Print recipe only here.¼ c extra virgin olive oil (I used a little less than 1/8 c)1 tsp minced garlic1 small shallot, chopped1 jalapeno, seeded, chopped4 sun-dried tomatoes, chopped1 tsp curry powder½ cup uncooked quinoa1 cup water (maybe more if needed)1 small cucumber, peeled, seeded, and diced2 Tbsp finely chopped cilantro1 Tbsp fresh lime juice12 endive leavesSea saltTo prepare quinoa:Pour the uncooked quinoa in a fine-mesh sieve; rinse and drain. (This helps remove some slight natural bitterness from the grains). In a small saucepan, add quinoa and ! 1 cup water; bring to a boil. Reduce heat, simmer, and cover until all of the water is absorbed, about 15-20 minutes. (If the water has evaporated before the quinoa is cooked, just add a bit more.) The quinoa will be done when the grains have turned partially white, and the spiral-like germ of the grain is visible. They should maintain a slight crunch when eaten. This will yield about 1 ½ cups cooked quinoa.In a small skillet, saute garlic and shallots in olive oil over medium heat, about 2 min. Add the jalapeno and curry powder; heat another 2 min. Remove from heat; let cool. Place in a bowl, and add cooked quinoa, tomatoes, cucumber, cilantro, lime juice, and salt. Toss to coat well. Tyler Burkman: You want something really easy and cheap? Quesedillas. If you've never had one a basic one easy: a flo! ur tortilla folded in half with cheese in the middle, grilled on a skil! let or griddle. I prefer them with some butter cooked on the outside and with sour cream and salsa to dip in. You can also throw in any extra meats or veggies you have lying around. Add a little mexican seasoning if you want some spice and there you go!
